Warm salad with smoked kahawai

Full load of vitamins and fibers!

A wintry veggie salad with a smoked fish is a lovely and delicious way of eating a full load of nutrients, both vitamins and fibers here! The dressing with capers, garlic and lemon perfectly just lifts the sweetness from the beetroot and honey and the fat from the fish. Give it a go and enjoy a colorful plate!

For 4 persons you need: 800gram beetroot, 2tbsp butter, 400g savoy or ordinary cabbage, 1 tbsp honey, 400g (or more!) smoked kahawai or any smoked fish.

Boil the beetroot and rub the skin off. Cut into 1-2cm cubes. Cut the cabbage into 2-3 cm cubes, heat a pan with butter and melt the cabbage until soft. Add salt and honey to taste.

For the dressing you need ¼ cup capers, zest and juice from ½ lemon, 1 minced garlic clove, 1/3 cup olive oil. Mix all ingredients short in a food processor so that you still have chunks of capers. That is at least how my family prefers it! Add salt and pepper to taste.

Serve beetroot, cabbage and pieces of fish on a plate and scoop the dressing over to taste. Add some extra capers if you are a capers lover!
