Kingfish in Laksa version

Simple, warm and yum!

Laksa is an easy to make and healthy curry coconut noodle soup. You can make it with chicken, prawns vegetarian or anything. I did it with kingfish and it was great! Even my son liked it! The secret for him is not to cook the fish too long, or not at all :-)

For 3 people: Peel and thinly slice 4 shallot onions. Peel and finely chop 2cm fresh ginger. Peel and chop 3 garlic cloves.

Heat a drizzle of oil and add onlion garlic and ginger. Add 2 tbsp red curry paste (or 2tbs green curry paste) and saute for 1 minute so all the flavors develops! Add one can of coconut milk and the same amount of stock (veggie, chicken or fish. I used veggie). Add 1-2 tbsp fish sauce and, if you have, some lemon grass. Let simmer together.

Meanwhile cook noodles according to the package. I used udon noodles. They are Japanese but that was what I had at home! Also rinse and cut fresh spinach and cut the fish in cubes. When soup is up to taste put the spinach in and take the pot from the heat. Put the fish in and put the lid on and let be for a minute before serving.
